
Who doesn’t love a sausage roll. Especially when they are homemade!
It wasn’t only Freddie that had his hand in the kitchen back in Eaglehawk, his wife (Fanny) was also whipping up the homemade goods.
And like Freddie’s condiments, this recipe has been handed down the generations and is still being made today and enjoyed by the family.
This is our easy-peasy, tried and tested homemade sausage roll recipe. There are a few variations to suit everyone and all you need to do is adjust the recipe as you need.

- 250g sausage mince
- 1 tsp mixed herbs
- 1 onion (finely chopped)
- ¾ cup breadcrumbs
- 2 tbsp Corporal Freddie's Worcestershire Sauce

- Salt and pepper to season
- 4 sheets of puff pastry
- Milk or egg (for brushing top)
- (Option) 1 carrot (grated)
- (Fancy option) Sesame seeds
Vegetarian Option
- 1 carrot (grated)
- 250g pumpkin (grated)
- 100g or ¼ cabbage (finely chopped)
- 1 cup grated cheese
- 1 egg (used in this option to help bind ingredients together)
Method
1. Pre-heat oven to 200 degrees (fan-forced)
2. Line large baking tray with baking paper
3. Thaw puff pastry

4. Meanwhile, mix all ingredients together
5. Sprinkle flour onto a chopping board and roll mixture into a long sausage
6. Cut pastry sheet in half
7. Wet the sides (lengthways)
8. Place half your long sausage on each pastry half and roll up
9. Ensure the seam is underneath at the bottom
10. Brush the top with milk (or an egg)
11. Top with sesame seeds if you like to be a bit fancy
12. Cut pieces into your desired size (we like them small and bite sized)
Makes approx 32-48
